Vegan Banana & Chocolate Chip Oat Squares

I know, I said “vegan”, but don’t be scared, these actually taste like a normal baked treat.

I had an abundance of overripe bananas on my counter (surprise, surprise) so I thought I’d try out this recipe that I found at A Bicycle Built for Two.  

Here we go:

Preheat oven to 350 degrees.

Mash up 1 banana in a small bowl. Add in 1/3 cup of canola oil and 2/3 cup brown sugar and mix well.

Add in 3/4 cup all purpose flour, 1/2 tsp baking soda, 1/4 tsp salt, 1/2 tsp cinnamon and 2 cups oats.  Mix. Throw in a handful of chocolate chips.  Mix. 

Press mixture into a 8x8 square baking pan lined with parchment.  Bake for 20 minutes.

Enjoy!  

These taste like an oatmeal chocolate chip cookie with a slight hint of banana. They are chewy and soft.  I might reduce the sugar the next time I make them, just to make them a wee bit less sweet.  Otherwise, this recipe is a winner!

  • 1 banana (mashed)
  • 1/3 cup canola oil
  • 2/3 cup brown sugar
  • 3/4 cup  All purpose flour
  • 2/3 cup chocolate chips
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 cups rolled oats

Preheat your oven to 350 degrees and line a 8x8 inch pan with parchment paper.

In a large bowl mash up your banana. Add in the canola oil and brown sugar and mix all of these ingredients well.  Add in the flour, baking soda, salt, cinnamon and oats.  Mix until combined. Throw in a handful of chocolate chips.  Pour mixture into pan. 

Bake in oven for about 20 minutes.
