WIAW No. 4
Wednesday already?! Yay! A big thanks to Jenn at Peas and Crayons for making Wednesdays way more exciting!
If I would have remembered that this was my 4th installment I would have maybe put in a bit more effort to make my meals a bit more special since my all time favourite number 4. Oh well, there’s always WIAW No. 44., till then, here are my eats for today…
Breakfast



Overnight Pumpkin Oats (recipe below), mixed berries (strawberries, blueberry, raspberries), slice of pumpkin bread and peanut butter.
Overnight Pumpkin Oats
- 1/3 cup oatmeal
- 2/3 cups water
- 1/2 cup pumpkin puree
- 1 tsp chia seeds
- 1 tsp cinnamon
- squirt of honey
Mix all together and refrigerate overnight.
This has been my favourite overnight oat mixture yet.
Lunch
Lunch was leftovers from the potluck we had at work yesterday. The photos were secretly taken with my iPhone since I was having lunch with my coworkers…

Veggie samosa, chicken stirfry, pumpkin chili (my potluck contribution, recipe post pending), chicken nuggets, butter chicken on basmati rice.
We also had leftover cake from yesterday….

Tuxedo cake (from Costco). I must say, this is my favourite store-bought tuxedo cake, though, I guess I should just say favourite tuxedo cake ever since I’ve never had a homemade tuxedo cake before.
Dinner

Salad, steamed clams, roasted garlic broccoli and ciabbata bread.

I ended up eating all 2.5 lbs of these suckers because Steve wasn’t a fan of them.

No complaints here, I like them!

Dessert/Snack
I couldn’t decide what I wanted for dessert after dinner. No cravings for anything at all. I even picked up a box of President’s Choice The Decedent chocolate chip cookies (they were on sale, and are totally delicious) after work today when I was there to pick up some allergy medicine. Nope, didn’t feel like having them tho. Usually I’m already into my dessert and halfway done by the time Steve starts cleaning up the kitchen. I have a bunch of cherries and lychees in the fridge so I’ll probably snack on some of those later.
