Father’s Day Brunch + Waffle Recipe

Happy Fathers Day to all the super great fathers out there!  

We had Steve’s parents (Bern & Gloria) over for brunch today to celebrate and show appreciation to what a great father Bern is.

Waffles, turkey sausages, scrambled eggs, fruit salad, berry compote and whipped cream….

At the end of this post I’m going to give you the recipe for these waffles.  They’re light, crispy and tastes delicious…

Waffle Recipe

I had tried at least 3 other waffle recipes before I found this one.  The other’s were either too eggy, too dense/heavy or too soggy.  These were just right! 

Since discovering this recipe at I had made them at least 5 times with each time producing amazingly crispy and delicious waffles….

Waffles of Insane Greatness (a.k.a. BEST WAFFLES EVER!!!) 

Recipe adpated from Aretha Frankenstines found on the Food Network site.

  • 1 1/2 cups all purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups buttermilk
  • 2/3 cup vegetable oil
  • 2 eggs
  • 3 tablespoon sugar
  • 1/2 teaspoons vanilla
  1. In a medium bowl, mix in the flour, cornstarch, baking powder, baking soda and salt.  Mix well.  
  2. Add in the milk, vegetable oil, egg, sugar and vanilla.  Mix well.
  3. Let the batter sit for 30 minutes.  (I sometimes skip this part and the results come out the same as when you let the batter sit for 30 minutes.)
  4. Preheat waffle iron. (You do not need to use non-stick spray on the iron as the oil in the batter will allow the waffles to release with ease). 
  5. Follow the directions on your waffle iron to cook the waffles.

Note: When I make these waffles I always have my oven preheated to 230 degrees so that as soon as I finish a batch of waffles I transfer them to the oven (straight onto the rack) where they will keep warm and crispy.  The first time I made these waffles I just laid them on top of each other on a plate with tinfoil overtop. This made them all soggy once they had reached the table. Not good.

Now if you don’t have a waffle maker I suggest that you go out and get one right now! Yes, these are that good.  If I would have known, I would have gotten Bern a waffle maker for father’s day. He enjoyed these waffles so much that he said that he was going to go out and get a waffle iron of his own.  This recipe post is for you Bern! Enjoy!
