Oatmeal Banana Bread + Pie Maker

Look at what I spotted at London Drugs on my lunch break yesterday:

“Individual homemade pies baked in as little as 10 minutes”! Are you kidding me?!  I  NEED this. Now! Please?

Fage greek yogurt with chia seeds, strawberries and raspberries.  

After dinner I decided to bake something that contained bananas since I had 4 ugly overriped bananas laying around.  

I decided to whip up my own creation:

Oatmeal Banana Bread

I know, more oats, but I just can’t get enough oats.  I just can’t help but want to add them to everything I make.  I just love the texture of it.  I also added some Greek yogurt into the mix because I’ve heard that it makes things moister.  Yup, this cake came out super moist with a great banana flavour and an awesome chewy moist texture! What a dream. 

Here’s a picture of all the ingredients mixed together, poured into the pan and ready to go into the oven…

This is after 50 minutes in the oven at 325 degrees F.

Just look at that banana oat goodness. 

Oatmeal Banana Bread

Ingredients 

  • 1/4 cup and 2 tablespoons butter
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 3 very ripe bananas, mashed
  • 8 oz greek yogurt
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1-1/2 teaspoons baking soda
  • 1 cup all-purpose flour
  • 1 cup quick cooking oats (not instant)

Directions

  1. Preheat oven to 325 degrees F. Line 8x8 square pan with parchment paper. 
  2. In a large bowl, cream butter with the brown and white sugar. 
  3. Mix in egg, mashed bananas, sour cream, vanilla and cinnamon. 
  4. Mix in salt, baking soda and flour. Stir in nuts. Divide into prepared pans.
  5. Bake for 50 minutes, until a toothpick inserted in center comes out clean.
