Oatmeal Butter Tart Squares
I usually like baking multiple things at once because I figure I’ve already made a mess and all the ingredients and equipment is out. So, as soon as my Oatmeal Berry Muffins were in the oven, I started on this:
Oatmeal Butter Tart Squares

This recipe didn’t actually call for the oats in the crust, but since I love oats and have copious amounts of it, I replaced some of the flour with oats.

They’re gooey and they’re chewy.

Ingredients:
Crust:
- 1/2 cup butter
- 1/4 cup sugar
- 1/2 cup all-purpose flour
- 1/2 cup quick cooking oats
Topping:
- 2 eggs
- 1 cup baked light brown sugar
- 1 tbs melted butter
- 2 tbs all-purpose flour
- 1/2 tsp baking powder
- 1 tsp vanilla
- 1 cup raisins (optional)
Directions:
Base:
- Cream butter with sugar.
- Blend in flour until crumbly.
- Press into the bottom of a 8” square baking pan. (You have to spread it quite thin)
- Bake at 350 degrees F for 15 minutes until lightly browned.
Topping:
- Combine all ingredients and pour over base.
- Bake for an additional 30 minutes.
- Let cool in pan for about 10 minutes.
- Cut into 9 squares.
