Oatmeal Berry Muffins
Gooooood morning! Hope everyone is having a great Saturday so far.
A small miracle happened today. I slept in….until…9:08 a.m!! I usually wake up at 6 a.m. everyday, yes, even weekends! I actually did wake up at 6:07 a.m. this morning, but then forced myself to go back to sleep. This doesn’t usually work, but it did today.

(This is me and my bed head excited that I had slept in)
I like to wake up early so I can clean and get all my chores over with so that I can start making a mess again (i.e. baking).
I felt like making muffins today so I decided to make these:
Oatmeal Berry Muffins

They are low in sugar (only 1/4 cup of sugar between 8 muffins).

Plus, there’s no fat!


Ingredients:
- 1 1/4 cup quick cooking oats
- 1 cup all-purpose flour
- 1/4 cup white sugar
- 1 tbs baking powder
- 1/2 tsp salt
- 1 cup almond milk (you can use any type of milk)
- 1 egg
- 1/4 cup mashed up banana (about 1/2 a banana)
- 1 cup frozen mixed berries
Directions:
- Combine oats, flour, sugar, baking powder and salt.
- Mix in milk, egg and banana. Mix until dry ingredients are moistened.
- Fold in frozen berries.
- Fill lined muffin cups. (I like to fill my entire cup)
- Bake a 425 degree F for 20 minutes.
