Oatmeal Berry Muffins

Gooooood morning! Hope everyone is having a great Saturday so far.  

A small miracle happened today.  I slept in….until…9:08 a.m!! I usually wake up at 6 a.m. everyday, yes, even weekends!  I actually did wake up at 6:07 a.m. this morning, but then forced myself to go back to sleep.  This doesn’t usually work, but it did today.

(This is me and my bed head excited that I had slept in)

I like to wake up early so I can clean and get all my chores over with so that I can start making a mess again (i.e. baking).

I felt like making muffins today so I decided to make these:

Oatmeal Berry Muffins

They are low in sugar (only 1/4 cup of sugar between 8 muffins).

Plus, there’s no fat!

Ingredients:

  • 1 1/4 cup quick cooking oats
  • 1 cup all-purpose flour
  • 1/4 cup white sugar
  • 1 tbs baking powder
  • 1/2 tsp salt
  • 1 cup almond milk (you can use any type of milk)
  • 1 egg
  • 1/4 cup mashed up banana (about 1/2 a banana)
  • 1 cup frozen mixed berries

Directions:

  1. Combine oats, flour, sugar, baking powder and salt. 
  2. Mix in milk, egg and banana.  Mix until dry ingredients are moistened.
  3. Fold in frozen berries. 
  4. Fill lined muffin cups. (I like to fill my entire cup)
  5. Bake a 425 degree F for 20 minutes.
