Notorious M.L.W.
Well, the weather sucks, so you know it must be the Notorious M.L.W. (May long weekend)! I was really hoping that this year would be different. I was planning a day-o-fun outdoors, but as soon as I woke up and looked out the window, I knew it wasn’t happening. It looked like it was going to be one of those days (i.e. baking day!). So I hurried up and had some breakfast:
Breakfast
Oatmeal with banana & chia seeds, spoonful of peanut butter and a side of strawberries.


During breakfast I decided on what I wanted to bake.
I ended up making granola, a chocolate bundt cake and baked some previously frozen cowboy cookie dough. {Posts to follow}
Lunch
Asparagus soup, fried egg on whole wheat pita bread, veggies with salsa and hummus.

After lunch Steve and I went to Walmart and Best Buy. I used all my superhuman strength to leave Best Buy empty handed. It runs in my family, we love electronics.
Our main purpose at Walmart was to get treats. We knew that we were going to be watching movies today so we had to make sure that we had some treats available. We left with three bags of candies (liquorices and gummies) and some chocolate.
We decided on watching the 1994 movie The Professional. Till this day I still love Natalie Portman as much as I did 17 years ago. I thought she was the coolest and she still is.
Along with the treats we got a Walmart I also had:
Greek honey yogurt with granny smith apple, strawberries and topped with my homemade granola.


And more snacks
Cowboy cookie

And a lemon poppyseed and arrowroot cookie. I’m on my very last sleeve of these Arrowroot cookies. Not bad considering it was the Costco size box that I had bought around December.

Dinner
Corn on the cob, basmati rice, halibut, tofu and zucchini.

I’m going to share with you the recipe I used for this microwave basmati rice. It’s the best rice I have ever made!! It was fluffy and nicely separated. My rice usually comes out as a sticky clump, maybe that’s why we go through a bag of rice once every 2 years or so. This microwave version barely took any effort and it was done in about 15 minutes. I can see a lot of rice in my near future. I will post the recipe soon!
After dinner we decided that we would head to SilverCity Coquitlam to watch Thor. I’ve only heard good things about this movie so I was pretty excited. We also thought that since it was a long weekend that everyone would be out of town and that the theater would be empty. WRONG! The place was packed!! I couldn’t even get into the building. I made the executive decision and opted out of it. I decided that we can go rent a movie or watch one of the crappy straight to DVD movies that I download from the internet.
We got home and I made the executive decision once more to watch From Prada to Nada staring Camilla Belle and Alexa Vega. Hey don’t judge! It was a free download, plus it ended up not being all that bad. Ok fine, it was pretty cheesy and lame, but I still enjoyed it.
For the movie we had more candies along with:
Munchies mix

Banana and strawberries topped with vanilla bean ice cream sprinkle with granola and a drizzle of chocolate ganache.


This was so good and so quick and easy to make. I will be making this again soon.
